Recipe: Apple crumble

Satisfy your sweet tooth with this delicious gluten-free apple crumble recipe.

Ingredients

(Serves 4)

  • 1½ cups (150g) of Smartbite almond flour
  • Pinch of salt
  • 1 tsp (5ml) of cinnamon
  • 150g of cold butter, cubed
  • 1 cup (150g) of Smartbite coconut sugar
  • 1 cup (100g) of Smartbite gluten free oats 
  • ½ cup (80g) Smartbite macadamia nuts, chopped

Filling

  • 2 tbsp butter
  • 4 apples, peeled and deseeded 
  • 2 tbsp Smartbite coconut sugar or to taste
  • 1 tbsp (15ml) lemon
  • 1 tsp (5ml) ground cinnamon
  • Seeds from one vanilla pod or 2 tsp vanilla paste
  • Double cream yoghurt

Method

  1. Heat the oven to 180°C.
  2. Place the almond flour and a pinch of salt in a large bowl.
  3. Add the butter and coconut sugar and rub together with your fingers to form coarse crumbs.
  4. Stir in the oats and the nuts.
  5. Spoon the crumble onto a baking tray and bake for 15 minutes.
  6. To make the filling, cut each apple into eighths. Melt the butter in a large pan over a medium heat and add the apples and coconut sugar. Toss to combine.
  7. Add the lemon, cinnamon, vanilla and ¼ cup of water and leave to bubble for 10 minutes or until the apples are soft, but still firm.
  8. Pour into a baking dish, top with the crumble and bake for 10 minutes.
  9. Serve with double thick cream yoghurt.
