Ingredients
Serves 2 – 4
- 2 tbsp Smartbite flaxseed oil
- 10 broccoli tenderstems
- 1 large marrow
- 2 yellow patty pans, quartered
- 1 baby gem marrow, quartered
- 100g asparagus spears
- 2 whole bok choys, halved
- 80g sugar snap peas
- 2 tbsp sesame seeds
- 2 tbsp Smartbite chia seeds
- 3 Smartbite seed crackers, quartered
Tahini dressing
- ¼ cup of water
- 2 tbsp Smartbite tahini paste
- 2 tsp Smartbite honey
- 2 tbsp lemon juice
- 1 tbsp soy sauce
- 1 clove garlic, crushed
Method
- Heat the oil in a large non-stick pan.
- Sauté the broccoli, marrows and asparagus until just tender with a firm bite.
- Steam the bok choy and sugar snaps in a Smartbite steamer.
- Toss all the vegetables together and arrange on a platter.
- Toast the sesame and chia seeds in a pan for a minute or two until nicely browned and sprinkle over the vegetables with the seed crackers.
- Blend all the tahini ingredients together and drizzle over the salad.
