Ingredients
(Serves 6)
- 2 eggs, beaten
- 1 cup milk
- 1 cup Smartbite Fritter and Flapjack mix
- 500g samp and beans, cooked
- 1 round feta, roughly crumbled
- Leaves from 1 sprig of rosemary, roughly chopped
- Oil for cooking
- Wilted spinach and rocket, to serve
Method
- Whisk the eggs and milk together.
- Add the premix, samp and beans, feta and herbs, and mix well.
- Heat a little oil in a non-stick pan and spoon in a dollop of the samp-and-beans batter.
- Cook until golden on both sides.
- Repeat with the remaining batter.
- Serve with wilted spinach and rocket or topped with a poached egg and crispy bacon.
