RECIPE: Samp and beans fritters

Gather the family round and savour these unique flavours!

Ingredients

(Serves 6)

  • 2 eggs, beaten
  • 1 cup milk
  • 1 cup Smartbite Fritter and Flapjack mix
  • 500g samp and beans, cooked
  • 1 round feta, roughly crumbled
  • Leaves from 1 sprig of rosemary, roughly chopped
  • Oil for cooking
  • Wilted spinach and rocket, to serve

Method

  1. Whisk the eggs and milk together.
  2. Add the premix, samp and beans, feta and herbs, and mix well.
  3. Heat a little oil in a non-stick pan and spoon in a dollop of the samp-and-beans batter.
  4. Cook until golden on both sides.
  5. Repeat with the remaining batter.
  6. Serve with wilted spinach and rocket or topped with a poached egg and crispy bacon.
