Welcome to the delectable world of natura sugars!Our truly unrefined sugars are made from lush ripe canes cultivated in the tropical island of Mauritius without having recourse to any process of genetic modification.Sugarcane stalks are simply washed and crushed to extract cane juice, which is clarified to remove any suspended solids. The resulting clear juice is evaporated into a thick syrup which is crystallised and separated to create a range of special sugars with varying textures, in a spectrum of natural colours. Each special sugar is unique in flavour and aroma owing to its distinctive molasses content within and around the crystals.Our sugar crystals are neither bleached nor irradiated (treated with ionising radiation or activated carbon) to remove all traces of colour. These scrumptious mini pavlovas will melt in your mouth:250g natura soft light brown sugar.4 egg whites at room temperature.2 tsp cornflour.1 tsp white vinegar.1 tsp vanilla essence.1. Preheat the oven to 180 degrees C and line a baking tray with baking paper.2. Whisk the egg whites with an electric mixer until stiff peaks form.3. Gradually add the natura soft light brown sugar, whisking continuously until a glossy meringue is obtained.4. Add the cornflour, vinegar and vanilla essence and whisk to combine.5. Spoon about 1/2 cup of the glossy mixture at a time onto the tray and shape into rounds making a slight indentation in the middle makes about 10.6. Reduce the heat to 150 degrees C and bake for 30 minutes. Turn the oven off and leave the tray in for another 30 minutes.7. To serve, spoon some cream on each cooler. Pavlova and top with fresh berries or tropic fruits!
