Fresh, crunchy, spicy, moreish – these dishes, made using the new Clicks Smartlife range, deliver all the texture and flavour of traditional party foods while packing serious nutritional punch and avoiding processed carbs. 

The Smartlife by Kambrook dehydrator: Curried cauliflower “popcorn”

Serves 4

You will need:

2 heads of cauliflower 

60ml coconut oil, melted 

60ml Cheddar cheese, finely grated 

2 tsp roasted masala spice

1 tsp turmeric

Pinch of salt

Wash and dry the cauliflower heads. Cut into small chunks. Whisk the rest of the ingredients together and pour over the cauliflower chunks. Toss to combine. Arrange in single layers throughout the dehydrator and leave to dry for 16 hours. Serve immediately.

The Smartlife by Kambrook yoghurt maker: Rosewater yoghurt and berry parfait with nut crumble 

Serves 4 

Yoghurt

1L full-cream milk

175g Bulgarian yoghurt  

1 tsp rosewater

1 tsp Smartbite honey

Seeds from one vanilla pod

Handful mixed berries

Mint leaves to garnish

Prepare your yoghurt maker as per manufacturer’s instructions. Whisk together the milk and Bulgarian yoghurt and place in the yoghurt maker at the desired setting. Depending on what you choose it can take anything from 5-12 hours. It also needs to be refrigerated for at least 2 hours before serving. You can leave the yoghurt plain or whisk in the rosewater, honey and vanilla seeds just before refrigeration. 

Crumble

160ml Smartbite mixed nuts, 
finely chopped

80ml Smartbite 
gluten-free oats

80ml cake flour

60ml Smartbite fructose 
or xylitol granules 

3 tbsp butter, melted 

Preheat the oven to 180°C. Line a baking tray with baking paper. Stir all of the ingredients together and scatter onto the baking tray. Bake for 15 minutes. Allow to cool, and store in an airtight container. 

Berry Coulis

350g mixed frozen berries, defrosted 

60ml berry juice

60ml Smartbite fructose or xylitol granules 

Place all the ingredients in a saucepan over medium heat and stir until the fructose/xylitol has been dissolved. Allow to simmer for 10-12 minutes until soft. Using a hand blender, puree until fine. Keep it in the fridge until ready to use. 

Layer the yoghurt, coulis and crumble. Garnish with berries and mint and serve.
